One of my favorite foods is spaghetti squash and I love using it to replace pasta. This recipe is super easy and only takes about 45 minutes.
1 large spaghetti squash or 2 small
1lb ground beef or ground turkey
18 oz tomato sauce or your favorite spaghetti sauce
Preheat Oven to 375 degrees
Cut the spaghetti squash in half and spoon out the middle
Place inside down on a foil covered baking pan
Bake for 45 minutes
While that is baking cook your meat thoroughly
When pink is gone turn the heat down to low and add your tomato/spaghetti sauce
Add scallions finely chopped along with the zucchini
I do not measure out seasonings so add as much or as little as you like.
Let that simmer for 7-10 minutes
When the squash is done place in a container and use a fork to scrape out the squash, this is what makes it look like spaghetti.
Place your meat mixture on top of spaghetti squash, sprinkle with a little parmesan cheese and you are ready to eat!
